Baby pizzas were one of my mom's specialties when I was a kid. I love them for their deliciousness as well as their nostalgia! They are also a great way to get your pizza fix with reasonable portion sizes. Mmm, Pizza!!!

Recipe Ingredients for Baby Pizzas - Sausage and Mushroom

6 English muffins
60 grams lite wheat bread (3 slices)
24 oz pasta sauce
5 oz tomato paste
2 cups shredded Italian blend cheese
2/5 lb chicken sausage
1/2 lb sliced mushrooms
1 tsp dried basil
1 tsp dried oregano
1 tsp black pepper

Recipe Directions for Baby Pizzas - Sausage and Mushroom

  1. Preheat oven to 300 F.

  2. In a nonstick frying pan, saute the sausage and the mushrooms. Allow to cool.

  3. Slice English muffins in half (the way they are pre-cut) and arrange on a cookie sheet with 3 slices of bread (needed to use up all the sauce).

  4. Thoroughly mix the pasta sauce with the tomato paste.

  5. Spoon an equal amount of sauce on each English muffin/bread slice.

  6. Top the sauce with a bit of cheese, just enough to cover.

  7. Divide the mushrooms and sausage evenly among the pizzas. Top with more cheese (this helps hold the toppings in place while you're eating!).

  8. Sprinkle each pizza with the basil, oregano, pepper, and any other herbs/spices you may like to add.

  9. Place cookie sheet in center of oven and bake for about 15 minutes, or until the cheese is melted and lightly browned.

  10. Cool slightly and serve with fresh carrots and celery, or a yummy salad!
