slow cooked veggies, beans and kale

Recipe Ingredients for Baby Limas and Kale

1 lb dried baby lima beans (soaked)
100 g carrots chopped
100 g celery chopped
160 g onion chopped
2 tbsp olive oil
4 cloves garlic
1 lb kale (one bunch) chopped
3 c water
1/2 tbsp salt
1/2 tsp pepper
1/2 tsp cajun seasoning
1/2 tsp marjoram
1/2 tsp thyme
1/2 tsp rosemary
1/4 c tomato paste
1 tbsp olive oil
1/2 c bread crumbs

Recipe Directions for Baby Limas and Kale

  1. preheat oven to 275

  2. saute chopped veggies in 2 tbsp olive oil

  3. add garlic and saute a bit more

  4. mix (in casserole dish) the soaked beans, the kale, the sauteed veggies, the water and the seasonings

  5. bake covered for several hours at 250 til the beans are soft

  6. add the tomato paste and bake covered for another hour

  7. mix the last tbsp of olive oil with the bread crumbs and place on the beans and bake uncovered for another half an hour
