Recipe Ingredients for Baby Kale Sweet Potato Skillet

1 cup Sweetpotato
3 ounce Mushrooms, Portabella
1 cup, diced Celery
1 cup, chopped Onions
3 cloves Garlic
4 grams Ginger Root
0.125 cup, packed Raisins, Seedless
112 grams Organic Kales

Recipe Directions for Baby Kale Sweet Potato Skillet

  1. Cut up the onion, celery, mushrooms, sweet potato, garlic and ginger.

  2. In large skillet heat 1/4 cup water. Add onion, mushrooms, celery, ginger and garlic. Cover.

  3. Cook over medium heat until vegetables are tender, stirring every few minutes to keep from sticking. Add more water if needed but the veggies will provide plenty of moisture and it shouldn't need more.

  4. Add raisins and stir to mix. Cover and let simmer another 3 minutes.

  5. Add kale, stir to mix, cover and steam for 3-5 minutes until kale is bright green and tender.

  6. Serve hot and enjoy.
