My dad makes these for parties. They're great! Serving size around 25-30g ea. Recipe serving 100g for ease of conversion.

Recipe Ingredients for Baba's cigar borek

36 egg roll wrappers
5 oz feta cheese, crumbled
2 oz cheddar cheese, grated
1 oz parmesan cheese, grated
65 g egg (jumbo egg)
3 tbsp parsley, dried
2 tsp black pepper, ground
4 tbsp extra virgin olive oil

Recipe Directions for Baba's cigar borek

  1. Crumble the feta cheese into a mixing bowl. Grate the cheddar and parmesan in. Break egg into the mixture. Add shredded dried parsley and black pepper. Mix with a fork or whisk.

  2. Dip one corner of each egg roll wrapper into water, making sure only to wet the *inside* edge (the upper edge, when you lay the wrapper on the cutting board). Lay each diagonally on the cutting board or other clean surface, wet corner pointing away from you. Put a line of the cheese filling mixture horizontally along the middle of the wrapper, about a centimeter away from the midline on the side toward you (the dry side; the wet corner is away from you).

  3. Fold the dry corner away from yourself, over the line of filling. Squeeze the upper layer around the filling line with your fingertips. Then roll the rounded portion containing the filling a couple of inches away from you, toward the wet edge.

  4. Fold the left and right corners in toward the center, the crease exactly where the ends of the filling line is. Continue rolling the roll closed, so the wet corner seals to the dry surface of the rest of the roll. With the flat of your palm, roll it like playdough, back and forth, a few times, to seal it well.

  5. Now do the same for the other 35 wrappers (the recipe makes 36 because there are 18 per pack, in the packs we usually get, and we used two packs for this particular party). Put them on a plate, separating layers with waxed paper or paper towels.

  6. Heat olive oil in a large skillet on medium-high heat, until it just begins to smoke - then reduce the heat to medium. You'll want to use about enough oil to cover the bottom of the skillet to a depth of 1/4" (this will be considerably more than 4tbsp, but the amount left over afterwards makes the net amount of oil absorbed by the borek about 4tbsp).

  7. Place the borek into the skillet carefully, not dropping them in, but placing them so the oil doesn't splash around and burn you. Fry them for about 2-3 minutes a side, until they're golden brown.

  8. If you want to make them longer and thinner instead of shorter and fatter, you can do this by grasping them at both ends and gently, slowly stretching them. You can make them twice their original length this way - and they'll take about half as long to cook, but might not fit quite right in your pan, being about ten inches long instead of five :).

  9. Serve immediately; if they sit, they'll get soggy and cold.

  10. To reheat, put them on a cookie sheet in a regular (not microwave!) oven, as close to the upper heating elements as possible, on "broil," medium setting, until you hear the oil start to sizzle again.
