Yum. Delicious with cut up veggies, toasted pita wedges

Recipe Ingredients for Babaganush

1 eggplant
1/3 cup tahini
2 cloves garlic
1/2 cup lemon juice
1 salt

Recipe Directions for Babaganush

  1. roast eggplant until soft. (I put it on a gas stove top to burn the skin and add a wonderful roasted flavor)

  2. chop garlic in food processor and add eggplant to puree in food processor

  3. add juice from one lemon (about 1/2 cup or so)

  4. salt to taste
