Recipe Ingredients for Babaganoush

2 lbs eggplant (1 large or 2 medium eggplants)
3 cloves garlic, smashed
1/4 cup mayonnaise
1 teaspoon salt
1 tablespoon lemon juice
1 teaspoon minced parsley

Recipe Directions for Babaganoush

  1. Preheat oven to 400F.

  2. Bake the eggplant on a baking sheet for about an hour.

  3. Cool and skin the eggplant.

  4. Place eggplant in bowl of food processor.

  5. Add garlic, mayonnaise, salt, and lemon juice and process to desired consistency, pulsing 20-30 times for chunkier results or blending 15 seconds for smoother results.

  6. Season with additional lemon juice and salt to taste.

  7. Transfer to bowl, garnish with parsley, and serve!
