This is a classic dip, but often pretty loaded with fat. This is a healthier version that tastes great. Serving size is about 1/4 c.

Recipe Ingredients for Babaganoush made healthy

1 large eggplant
1 tbsp tahini
1 tbsp lemon juice
1/2 tsp salt
4 tbsp low fat mayonnaise
1 tbsp Splenda
1/2 tsp garlic powder
349 g silken tofu

Recipe Directions for Babaganoush made healthy

  1. Pierce the eggplant with a fork several times

  2. Bake at 350 degrees for about 40 minutes or until tender when pierced with fork

  3. Let cool slightly for ease of handling

  4. Peel (or scrape pulp)

  5. Place the eggplant and other ingredients in a food processor bowl.

  6. Process until smooth

  7. Refrigerate
