Recipe Ingredients for Babaganouj

2 eggplant
1 1/2 tbs lemon juice
1/2 cup tahini
3 garlic cloves
1 tsp salt
1/4 scallions, minced
1/2 cup parsley, chopped
1 tbs olive oil

Recipe Directions for Babaganouj

  1. Prepare eggplant: cut off the stem and prick w/a fork. Put on an oiled baking sheet and bake at 325F for an hour or until soft and wrinkled.

  2. Once cooled, scoop out the inside and mash them with all of the other ingredients except for the oil . Chill and then drizzle the oil on top. Serve as a side dish to Mediterranean entrees.
