Recipe Ingredients for Baba Ghanoush

1 1/2 lb. eggplant
3 T. Lemon Juice
1 t. Salt
2 t. Garlic, minced
3 T. Tahini
1/4 c. Parsley, chopped

Recipe Directions for Baba Ghanoush

Heat oven to 350. Bake eggplant 45 mins on a cookie sheet. Cool, peel and put flesh in a food processor In a small mixing bowl, mash the salt, garlic and tahini together. Put this mixture in the food processor with the eggplant, add the lemon juice and mix until smooth. Fold in the parsley.
