Recipe Ingredients for Baba Ghanoush

2 cups eggplant, cooked, roasted (about 1 large)
3 cloves garlic
3 tbsp tahini
2 tbsp lemon juice
1/2 tsp salt
1/2 chili pepper, chopped (optional)
1/2 tsp cumin
1/4 tsp black pepper
1/4 tsp cayenne
1 tbsp extra-virgin olive oil

Recipe Directions for Baba Ghanoush

  1. Preheat oven to 350 degrees. Pierce eggplant several times with a fork. Place on baking sheet and bake in oven until skin is charred and fruit is somewhat collapsed. Remove from oven.

  2. Allow to sit until cool enough to touch (about an 30-60 mins; you can put it in the freezer to speed up process) and once it is cooled somewhat, either remove skin or scoop meat out of skin into a bowl and discard the skin. Stir 1/2 tsp of salt into mixture, and pour into strainer and allow to sit for an hour to drain excess liquid.

  3. After the hour is up, pour the eggplant into a food processor with garlic, tahini, lemon juice, chili pepper, cumin, black pepper, cayenne and olive oil. Puree until combined and fluffy. Add more salt and/or pepper, to taste and puree again.

  4. Serve with pita bread at room temperature or chilled.
