Baba Ghanouj dip or spread for vegetables or pita

Recipe Ingredients for Baba Ghanouj

3 cup (1" cubes) Eggplant
12 tbsp Organic Tahini Butter - No Salt (Raw)
1/2 cup Lemon Juice, Canned Or Bottled
2 tsp Garlic
1 tsp Cumin
1 tsp Salt
1/2 serving Extra Virgin Olive Oil

Recipe Directions for Baba Ghanouj

  1. Broil or grill the eggplants, turning often until the skin is blackened and blistered and the meat is tender, about 20-30 mins. Let cool for about 10 mins then peel the skin from the eggplant. or

  2. Bake the eggplants in a 350 oven for 1 hr or less. Cut the eggplant in 1/2 lengthwise place on baking sheet skin side down.

  3. Squees the cooked eggplant meat to release the excess liquid.

  4. Puree the eggplant and remiaing ingredients in a blender of food processor.

  5. Transfer to a serving dish and garnish, if desired. Serve with pita bread wedges, radishes and green onions.

  6. Makes 3-4 cups
