Recipe Ingredients for Baba Ghannouj

1 1/2 lb (2 medium) eggplant
1/4 c tahini
1/4 c fresh lemon juice
2 cloves garlic
1 t kosher salt
1/2 t black pepper
1/4 c fresh parsley

Recipe Directions for Baba Ghannouj

Prick eggplant w/ fork & bake at 375 for 30-45 min. When cool enough to handle, skin, remove large seed pockets, chop & drain for 30 min. Mix tahini & rest of ingredients in food processor or hand blender. Add eggplant & process until smooth.
