A healthy and low fat alternative to hummus -- whole eggplant can be roasted on the grill or in the oven.

Recipe Ingredients for Baba Ganoush

2 cup (1" cubes) Eggplant
1 serving Tahini Creamy Puree Sesame Seeds
1 lemon yields Lemon Juice
0.25 cup fresh Parsley
2 dash Salt, Table
2 cloves, raw Garlic

Recipe Directions for Baba Ganoush

Roast eggplant in 450 degree oven for about 1/2 hr. Poke holes in eggplant or it will explode. Cool and peel eggplant while warm. Remove large seeds and drain eggplant for 20 minutes to allow excess juices to drain. Put eggplant (about 2 cups) into a food processor with 2 Tbsp. Tahini, 2 garlic cloves, 3-5 Tbsp. lemon juice, 1/4 c. parsley, salt, and black pepper . Pulse until smooth. Adjust for taste and refrigerate an hour allowing flavors to meld. Serve with pita bread or a variety of veggies.
