Classic middle eastern eggplant dip.

Recipe Ingredients for Baba Ganoush

2 eggplant
1/4 cup tahini
1/4 cup lemon juice
1 tbsp parsley, finely chopped

Recipe Directions for Baba Ganoush

  1. Prick eggplants and place whole in 350 deg oven for 40 minutes or until soft and collapsed. Then remove and let cool.

  2. Split skin and scoop out flesh and add it with tahini and lemon juice to food processor, and blend until smooth. Chill and serve as dip.

  3. Mix in parsley by hand.
