This is a wonderful treat that can be used as a main dish or side. I find it wonderful thing to have with raw veggies as your dipper. This makes it just that much healthier for you.

Recipe Ingredients for Baba Ganoush

2 large eggplant
4 tablespoons tahini
4 garlic cloves, minced
4 tablespoons fresh lime juice
1 pinch ground cumin
1 tablespoon extra virgin olive oil
1 salt, to taste

Recipe Directions for Baba Ganoush

  1. roast eggplant with olive oil and salt

  2. blend with garlic, lime juice, cumin and water if needed to make smooth.

  3. Enjoy with bread or fresh veggies
