Recipe Ingredients for Baba Ganoush with No olive oil

3 cups cooked eggplant
1/4 cup lemon juice
1/4 cup tahini
1/4 teaspoon salt

Recipe Directions for Baba Ganoush with No olive oil

  1. Mix all in a food processor.

  2. Note: for cooked eggplant, peel and slice 2 eggplants(3/4 inch slices) . Spray aluminum lined baking sheet with non-stick spray. Roast eggplants in one layer at 400 degrees for about 30 minutes, turn after 20 minutes. Can spray the eggplant with olive oil spray before roasting if desired.
