A yummy Eggplant dish. Serving size is 1/2 cup.

Recipe Ingredients for Baba Ganouj

2 cups Eggplants
2 tablespoons Tahini
5 cloves Garlic
1/2 cup Parsley
1 teaspoon salt
1/4 cup Lemon Juice
1 Salt
1 Black Pepper

Recipe Directions for Baba Ganouj

  1. Roast both the eggplant and garlic. Blend together in a blender.

  2. Blend or fold the Tahini into eggplant puree (i still think this is too much, i'd like to get it to a couple of tablespoons, just for taste).

  3. Add lemon, salt, and black pepper to taste.
