Easy baba ganouj. I ran out of tahini and subbed peanut butter. Interesting flavor.

Recipe Ingredients for Baba Ganouj

1 large eggplant
1 teaspoon olive oil
1 teaspoon natural peanut butter
1/3 teaspoon salt

Recipe Directions for Baba Ganouj

  1. Preheat the oven to 350 degrees.

  2. Cut the eggplant into cubes, then put into a roasting pan and cook for 20-30 minutes.

  3. When eggplant has cooled, put in a food processer and pulse a few times to start breaking it up.

  4. Add salt, olive oil, and peanut butter. Blend blend blend, then enjoy. Tastes better the next day.
