Recipe Ingredients for Baba Ganouj dip

4 lbs eggplant
1/2 c tahini
3 tbsp lemon juice
2 cloves garlic
1 tbsp olive oil
1 salt to taste
1 paprika to taste

Recipe Directions for Baba Ganouj dip

  1. Prick eggplant all over with a fork. Toast eggplant in skins for 45 minutes over a grill or 35 minutes in a 400 degree oven. Allow to cool, then remove skins. Blend in a blender just until pureed. Remove skins of garlic and mash in a mortar and pestle with a small amount of lemon juice. Add salt to taste. Mix together with pureed eggplant, with a fork Add olive oil as needed to make more creamy or smooth.

  2. Sprinkle paprika over the top of the dip and serve.
