Recipe Ingredients for Baba ganouch

1 medium eggplant
2 tablespoons tahini
1 garlic cloves, minced
2 tablespoons fresh lemon juice
1 pinch ground cumin
1 tablespoon extra virgin olive oil
1 tablespoon fresh flat-leaf parsley, chopped
1 salt, to taste

Recipe Directions for Baba ganouch

  1. peel and chop eggplant and place in microwave safe dish add a little water and cook until tender

  2. mix ingredients in blender and add oil and tahini slowly until creamy

  3. season to taste
