Delicious egglpant hummus. Makes a total of two cups (32 tbls). Serving size is about 1/4 cup.

Recipe Ingredients for Baba Ganhouj

1 large eggplant
3 tablespoons olive oil
1/2 cup garbanzo beans
1 1/2 tablespoons lemon juice
2 teaspoons tahini
1 garlic clove
1 teaspoon lemon zest
2 teaspoons chopped parsley

Recipe Directions for Baba Ganhouj

  1. Preheat oven to 350.

  2. Cut eggplant in half lengthwise, then score flesh in crosscross patern at 1-inch intervals, 1/2 inch deep.

  3. Rub cut sides with 1-1/2 tbls oil; spinkle with salt.

  4. Place eggplant on rimmed baking sheet, cut side down; bake until tender, about 1-1/2 hours. (OR saute in the oil until cooked)

  5. Put eggplant into blender; add garbanzo beans, remainint 1-1/2 tbls oil, lemon juice, tahini, and garlic; puree until almost smooth.

  6. Transfer to a bowl; stir in parsley. Season to taste with salt & pepper.
