Recipe Ingredients for Aztec Black Beans

16 oz black beans
4 medium tomatoes
1 white onion
1/4 cup cilantro
1/2 tsp salt
3 cloves garlic
1 poblano pepper

Recipe Directions for Aztec Black Beans

  1. Rinse beans and place in a large bowl and cover with water to soak overnight. Drain the beans and discard the soaking water.

  2. Chop tomatoes, onion, pepper, garlic, and cilantro and place in a crock pot with drained beans. Stir.

  3. Add just enough water to cover the beans. Cover and cook on low all day, 8 to 10 hours.
