Recipe Ingredients for (Ax) Veggie /w tomato vinegrette

300 g eggplant
400 g zucchini
100 g white button mushroom
150 g carrots
30 g green onions
2 tsp olive oil
3 tbsp vinegar
1/4 tsp salt
150 g tomato
1 tbsp splenda

Recipe Directions for (Ax) Veggie /w tomato vinegrette

  1. slice & dice eggplant, cucchini and musrooms; season and put them on the grill, cool down a bit

  2. julienne carrots & green onions; mix with grilled veggies

  3. tomato meat & oil & vinegar & splenda & salt for vinegrette - add spices

  4. add 1/2 cup freshly chopped basil

  5. (optionally top woth parmesan cheese)
