Austrian potato dumplings, goes great with roast pork.

Recipe Ingredients for (Ax) Potato Dumplings (Austrian)

500 g potatoes
100 g flour
25 g potato starch
12 g semolina

Recipe Directions for (Ax) Potato Dumplings (Austrian)

  1. Don't use fresh potatoes, preferrably last year's potatoes (less moisture). Always use floury potatoes.

  2. Boil potatoes until done, peel and while they are still warm crumble and squish them, add flour, starch, semolina and salrt and mix well.

  3. Make 4 dumplings and put them into (almost) simmering water for 15 minutes or until they float. Never boil your dumplings!

  4. When they are done, they should still be dry and floury inside to soak up all the greas from your pork roast. Yum!
