Great muffins... you can substitute some of the oil for applesauce to make these a little more healthy.

Recipe Ingredients for Awesome Apple Muffins

1 1/2 cups unbleached flour
1/4 cups white sugar
1/2 cups brown sugar
1/2 teaspoon salt
2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon ground ginger
1/3 cups vegetable oil
1/3 cups milk
1 egg
2 medium apples (cored and chopped)

Recipe Directions for Awesome Apple Muffins

Preheat oven to 400 degrees F (200 degrees C) Grease 12 muffin cups or line with muffin liners. Stir together flour, sugar, salt, baking powder, and spices. Mix in oil, egg, and milk. Fold in apples. Spoon into muffin tray. Bake for 20 to 25 min. until toothpick inserted into center of muffin comes out clean.
