Recipe Ingredients for Avocadoes with corn and peppers

1 T extra-virgin olive oil
1/2 large red onion, chopped
1 red bell pepper, large, seeded and chopped
1 pepper, jalapeno, seeded and finely chopped
4 ears corn, husked cut off cob
1 t sugar
1/8 t red pepper
1/8 t salt
2 T butter
2 avocados, ripe
38 grams lime juice, 1 lime juiced

Recipe Directions for Avocadoes with corn and peppers

  1. Heat olive oil in pan over moderate heat.

  2. Add onion, jalapeno. bell peper and saute 3 minutes.

  3. Add cor and break up kernels. Add in red bell pepper.

  4. Add sugar, cayenne, and salt. when misture bubbles, reduce heat to a simmer.

  5. Cut butter into pieces and stirl in the corl mixture.

  6. Simmer until creamy, about 5-7 minutes.

  7. Cut avocados in half and remove seed; leave outer skin on. Squeeze lime juice over avocados.

  8. To serve, put 1/2 avocado on serving plate and top with corn mixture. Sprinkle with fresh cilantro if desired.

  9. The avocado is spooned away from the the skin with bites of creamy, warm corn and peppers.
