So easy to make! Tuna salad with avocado, shredded carrots, Grey Poupon/dijon mustard (Wasabi would've been better if I'd had it handy).

Recipe Ingredients for Avocado & Tuna Salad

1 can tuna, albacore
1 avocado
1 tsp lime juice
1 1/2 tsp white vinegar
1/4 tsp black pepper
1/2 tsp yellow mustard
1 baby carrot, grated
2 1/4 tsp dijon mustard

Recipe Directions for Avocado & Tuna Salad

To start, mash half the avocado with the tuna until chunky smooth (however you like tuna salad to be). Then add everything but the 2nd half of avocado and mix. Of course, you can change some of the quantities to suit your tastes. Lastly, dice the remaining half of avocado and toss into the tuna salad. Serve over lettuce in a salad or on bread/toast or whatever floats your boat.
