Recipe Ingredients for Avocado, Spinach Pepper Omelette

3 large Egg, Whole
148 grams Avocados
0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
35 grams Spinach
94 grams Egg Substitute

Recipe Directions for Avocado, Spinach Pepper Omelette

Crack eggs and combine wtih Egg Beaters. Dice Red Pepper and add to egg mixture. Spray pan with PAM and add 1/8 tsp of garlic. Heat skillet. Add eggs and pepper to skillet. As omelette begins to cook, shred spinach into omelette. Once there is very little moisture left on the omelette, flip it. Add sliced avocado to cooked side. Salt, pepper, cayenne pepper to taste. Fold over. Enjoy!
