You can add 1/4 cup cilantro, loosely chopped, but I think it tastes like soap so I leave it out.

Recipe Ingredients for Avocado & Quinoa Salad

1 cup Quinoa
2 fruit without skin and seeds Avocados
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1/4 cup chopped Green Onions
1 fl oz Lime Juice, Canned Or Bottled, Unsweetened
1 dash Salt, Table

Recipe Directions for Avocado & Quinoa Salad

  1. Prepare quinoa as per package instructions & let cool

  2. Remove skins from avocado and chop into large pieces, add to medium/large bowl

  3. Chopped tomatoes into large pieces, add to the bowl

  4. Add in the chopped green onions and cilantro and add in the lime juice, salt and pepper and

  5. lightly toss to coat avocados with lime juice to prevent browning

  6. Once quinoa is cool, add to other vegetables, toss and serve in 4 individual bowls
