A rich and moist spiced quick bread made with avocado, similar to carrot or zucchini bread

Recipe Ingredients for Avocado Quick Bread

2 cups all-purpose flour
2/3 cups wheat bran
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 cup unsweetened applesauce
36 Splenda
3 eggs
1 1/2 cups avocado, pureed
3/4 cup skim milk
3 tsp white vinegar
2/3 cups unsweetened flaked coconut
1 tablespoon grated orange zest

Recipe Directions for Avocado Quick Bread

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans or line 24 muffin tins.

  2. Sift together the flour, baking soda, baking powder, salt, and spices. Set aside.

  3. In a medium bowl, cream together the Splenda (or sugar) and applesauce (or melted butter) until light and fluffy. Beat in the eggs one at a time, then mix in the mashed avocado.

  4. Stir in the dry ingredients alternately with the buttermilk (skim milk and vinegar mixed together) until just mixed. Fold in the coconut (original recipe called for 3/4 cups pecans and 1/2 cup raisins) and orange zest.

  5. Divide the batter evenly between the loaf pans/muffin tins.

  6. Bake for 1 hour in the preheated oven, or until a toothpick comes out clean. Allow to cool in pan for at least 20 minutes before removing.
