Recipe Ingredients for Avocado Lobster Roll

1/2 cup Avacado
1 tablespoon fresh lemon juice
1/2 red onion
1 cup of cooked lobster meat

Recipe Directions for Avocado Lobster Roll

  1. Cut and Prepare the Avocado

  2. Twist the halves and using your knife, strike and remove the pit. With a small paring knife, lightly cut the avocado. With a spoon remove the avocado from the peel and place it in a mixing bowl.

  3. Use a potato masher to mash the avocados until they are smooth. Add the lemon juice and stir. This will also prevent the avocados from browning.

  4. Chop the Onion

  5. Cut the red onion in half. Peel off the outside layer. Cut the onion, so there are thin cuts. Then, turn the onion and thinly slice again, so you have finely chopped onion. Run your knife through the pieces a few more times, so the pieces are nice and small.

  6. Prepare the Lobster Mixture

  7. Add to the onions to the mixing bowl the red onion. Also season with salt and pepper. Give this a stir.

  8. Last, add the lobster meat into the bowl. Gently coat the meat with the avocado mixture.

  9. Adding to bread is additinal calories.
