light, refreshing salad. Buttery avocados and tangy grapefruits make the perfect summer dish

Recipe Ingredients for Avocado and grapefruit salad

6 tbsp olive oil
2 tbsp white wine vinegar
1 grapefruit
2 large avocado
1 head romaine lettuce
1 dash of salt
1 dash of pepper

Recipe Directions for Avocado and grapefruit salad

  1. Using a whisk or fork whisk the olive oil and vinegar together in a large bowl. Season with salt and pepper and vigorously whisk again.

  2. Slice the top and bottom off the pink grapefruit. Pell the fruit by running a small knife all around it, between the peel and flesh. Make sure all the bitter pith is removed. (This is called citrus supreme...culinary foundations 1.)

  3. Hold the grapefruit over the bowl containing the dressing and cut carefully between the membranes, so that all the segments fall into the bowl. Squeeze the remaining pulp over the bowl to extract all the juics. (This is also part of citrus supreme, LOL)

  4. Run a knife around the length of the avacados. Twist the sides in opposite directions to seperate the halves. Use a large spoon to remove the pit, then peal the halves. Slice the flesh and cover the slices with the dressing, to stop discoloring.

  5. Tear the lettuce into pieces and add them to the bowl. Toss gently until evenly coated in the dressing. Adjust the seasoning to taste and serve!
