Recipe Ingredients for Avocado Cucumber Salad with Grapefruit dressing

1 head Romaine Lettuce
1 avocado
1 grapefruit
1 small cucumber
1/4 cup pine nuts
3 tablespoons honey
1 tablespoon vinegar
1 tablespoon olive oil
1 teaspoon lemon pepper
2 tablespoons Parmesan cheese, grated

Recipe Directions for Avocado Cucumber Salad with Grapefruit dressing

  1. In a large salad bowl, combine romaine, chopped avocado, sliced cucumbers, & pine nuts.

  2. Slice grapefruit in half. Squeeze juice from one half into a small bowl. Remove peel from the other half and cut into sections. Add to salad.

  3. Add honey, vinegar, and oil to the grapefruit juice and whisk til smoothly blended. Toss the salad with the dressing.

  4. Top with parmesan cheese and lemon pepper.
