Recipe Ingredients for Avocado & Corn Salsa

1 fruit without skin and seeds Avocados
1 slice, large (1/4" thick) Onions
1/2 cup Corn, Sweet, Yellow
1 medium (4-1/8" long) Onions, Spring Or Scallions
2 clove Garlic
1/2 cup, chopped Peppers, Sweet, Red
1/2 cup, chopped Peppers, Sweet, Green
1/2 cup, chopped or sliced Tomatoes, Red, Ripe
1 tsp Onion Powder
1/4 cup Lime Juice
2 tsp Cilantro
1/2 tsp Pepper, Red Or Cayenne
1/4 tsp Seasoning Blend
1 stalk, medium (7-1/2" - 8" long) Celery

Recipe Directions for Avocado & Corn Salsa

  1. Chop the raw veggies (all but the avocado) into small cubes and place in a medium size serving bowl.

  2. Add fresh, cooked or frozen corn kernels, onion powder, lime juice, cilantro, cayenne pepper and seasoning blend.

  3. Half, remove the pit, score and scoop out avocado and fold gently into the other ingredients.

  4. Great served with black beans or add drained black beans for a heartier side dish. Cover and store leftovers in the refrigerator.... if there are any.

  5. Serves: 6 - 1/2 cup servings.
