A great summertime salad, and the perfect way to use leftover corn.

Recipe Ingredients for Avocado and Corn Salad

1 avocado, NS as to Florida or California Avocados
1 large whole (3" dia) Tomatoes, Red, Ripe
0.5 medium raw Onion Red
2 ear, medium (6-3/4" to 7-1/2" long) yields Corn, Sweet, Yellow
1 lemon yields Lemon Juice

Recipe Directions for Avocado and Corn Salad

  1. Chop onion, tomato, and avocado. Cut kernels off of cob. Combine all of the vegetables and add lemon juice as desired.

  2. Add salt and pepper to taste. Mix lightly. Serve cold.
