Weird, I know but they're actually pretty good!

Recipe Ingredients for Avocado Cookies!

1 medium avocado
3 tablespoons water
3/4 cup turbinado sugar
2 1/4 cups flour, gluten free
3 tablespoons almond breeze
1/2 cup coffee, hazelnut
1 teaspoon vanilla extract

Recipe Directions for Avocado Cookies!

  1. preheat oven to 350.

  2. get a nice, ripe avocado. cut in half and scoop out the insides. discard pit and peel.

  3. blend together avocado and water.

  4. mix avocado, sugar, vanilla together.

  5. mix flour and coffee.

  6. add flour/coffee mixture to the avocado mixture.

  7. spoon small pieces of dough on to a greased or ungreased cookie sheet (either one works!).

  8. bake for 10-15 minutes until cookies seem firm and just slightly browned on the peaks.

  9. cool and eat!
