Lovely, fresh, light chicken salad.

Recipe Ingredients for Avocado Chicken Salad

2 avocados, NS as to Florida or California Avocados
1/4 cup Corn, Sweet, Yellow
1/4 cup Black Beans Drained and Rinsed
1/4 cup Grape Tomatoes
2 medium (4-1/8" long) Onions, Spring Or Scallions
1 serving Cilantro leaves
2 tbsp white wine vinegar
1 cup,+chopped+or+diced Chicken
4 tbsp light mayonnaise
10 tortilla chips, crushed
1 dash salt

Recipe Directions for Avocado Chicken Salad

  1. Cut avocado in half.

  2. Mix all other ingredients together.

  3. Spoon on top of avocado.
