Not the prettiest looking salsa but very tasty! Can be served in pita pockets, as a filling for burritos or quesadillas, or used as a dip with tortilla chips.

Recipe Ingredients for Avocado, Black Bean, and Cottage Cheese Salsa

1 cup frozen corn
15 oz. black beans
1/2 cup cottage cheese
1 avocado, peeled, pitted, and diced
2 roma tomatoes, seeded and diced
1 cup salsa

Recipe Directions for Avocado, Black Bean, and Cottage Cheese Salsa

  1. Place corn in a microwave-safe dish and cover with water. Microwave on medium high for 2-3 minutes, or until tender. Cool under running water. Set aside.

  2. Drain black beans and warm in microwave-safe dish for approximately 2-3 minutes. Strain, and rinse under cold water to remove liquid and excess sodium. Set aside.

  3. Place cottage cheese in a mixing or serving bowl. Add diced avocado, diced tomatoes, corn, black beans and salsa. Stir until well blended. Cover and refrigerate until ready to serve.

  4. Serve with tortilla chips, or in a pita pocket, if desired. Can also be used as a burrito or quesadilla filling.
