Very low fat vegetable soup using autumn vegetables. Freezes well.

Recipe Ingredients for Autumn vegetable soup

500 grams sweet potato
500 grams carrots
2 large onions
400 grams parsnips
500 grams green beans
500 grams cabbage
200 grams celery
5 tsp salt
2 tsp black pepper
5 litres water

Recipe Directions for Autumn vegetable soup

  1. Chop all vegetables

  2. Bring water to boil in large pot

  3. Add onions and cook at low simmer for 10 minutes

  4. Add carrots, parsnips and sweet potato and cook at low simmer for 10 minutes

  5. Add remaining ingredients and cook for further 10 minutes.

  6. Serve
