Updated the basic sloppy lentils recipe to use seasonally available butternut squash.

Recipe Ingredients for Autumn Sloppy Lentils

2 tbsp olive oil
1 medium yellow onion, chopped
1 cup butternut squash, chopped
1 tbsp chili powder
1 1/2 cups lentils, rinsed and picked over
14 1/2 oz stewed tomatoes
3 cups water
1/4 cup ketchup
2 tbsp worcestershire sauce
2 tbsp tamari
1 tbsp dijon mustard
1 tsp mustard
1 tsp sea salt

Recipe Directions for Autumn Sloppy Lentils

  1. Heat 1 tbsp. of oil in a medium-size skillet over medium heat. Add the onion and butternut squash, cover, and cook until softened, about 5 minutes. Add the chili powder, stirring to coat.

  2. Use the remaining 1 tbsp of olive oil to grease a 3.5 or 4.5 qt. slow cooker. Transfer the onion mixture to the slow cooker. Add the lentils, tomatoes, water, tamari, mustards, ketchup, worcestershire, salt, and pepper to taste and stir to combine.

  3. Cover and cook on Low for 8 hours.
