Recipe Ingredients for Autumn Roasted Vegetables

1 sweet potato
3 medium red potatoes
1 fennel bulb
5 oz shitake mushrooms
1 small onion
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp kosher salt

Recipe Directions for Autumn Roasted Vegetables

  1. cut vegetables to be of similar size. close to 1" cubes or wedges

  2. toss veggies, oil, 1 tbsp vinegar, and salt in roasting pan

  3. cook at 450 degrees for 30-35 minutes or until fork tender. drizzle with remaining vinegar.
