Recipe Ingredients for Autumn minestrone

193 g pinto beans
100 g chickpeas
160 g Petit Pois Peas
550 g potatoes
646 g zucchini
300 g broccoli
70 g onion
6 g garlic
200 g tomato puree
4 g olive oil
150 g chicken stock

Recipe Directions for Autumn minestrone

  1. Heat oil in saucepan.

  2. Add chopped onion and chopped garlic, until golden.

  3. Add beans and potatoes.

  4. Add tomato puree and chicken stock.

  5. Add chickpeas and petits pois.

  6. Bring to boil and then leave to summer for 10 minutes.

  7. Add herbs and seasoning, chopped zucchinis and broccoli florets. Simmer until cooked (vegetables should be soft).
