Recipe Ingredients for Autumn Egg White Frittata

6 egg whites, extra large
2 oz asiago cheese, shredded
1 small sweet potato
1 Granny Smith apple
1 small yellow onion
2 tbsp olive oil

Recipe Directions for Autumn Egg White Frittata

  1. Peel and dice apple, potato and onion

  2. In small nonstick frying pan, saute onions on medium heat until caramelized

  3. Brown potatoes

  4. Place apples in frying pan during next step

  5. Grate cheese

  6. Separate egg whites, mix with cheese

  7. Layer potatoes and onions over apples

  8. Pour eggs on top of vegetables

  9. Cover pan, leave for 7 minutes or until all egg white is just cooked

  10. Use spatula to detach entire frittata from pan; turn it out onto plate

  11. Slide frittata back into pan so other side is down

  12. Cook for 90 more seconds

  13. Slice, serve
