Oh, this is so good! I made this up one day when I had a can of cranberry sauce left over, turned out really delicious

Recipe Ingredients for Autumn Beef Cranberry Stew

1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
32 oz boneless bottom round roast, raw, lean only
140 gram onion
1 cup water
1 beef bouillon cube
2 tsp,+crumbled bay leaves
190 gram pearl onions
8 oz crimini mushrooms
1 oz all-purpose flour
1/3 cup water
14 oz Cranberry Sauce - Whole Berry Sauce
8 oz baby carrots
12 oz Ale

Recipe Directions for Autumn Beef Cranberry Stew

  1. Cut all visible fat off the meat, then cut into cubes. Sprinkle with the Thyme, salt and pepper.

  2. Spray a large heavy pot with cooking spray. Add the beef, and, over medium-high heat, brown on all sides.

  3. Add the chopped onions and stirring occasionally, cook for a few minutes. Add the water and beef bouillon cube. Stir to blend. Bring to a boil and cook over medium-low heat for about 2 hours, stirring occasionally, until beef is almost tender. Add the Pale Ale , stir to combine. Add the quartered mushrooms along with the pearl onions and baby carrots. Cook until carrots are tender, about 15 minutes.

  4. Add the cranberry sauce, stirring until blended into mixture.

  5. Last, combine the water and flour into a slurry, add to the stew to tighten slightly. Cook until no flour taste remains, about 3 minutes. And, serve with hot whole wheat pasta. Yum-yum!
