Authentic Chicken Paprika Recipe

This is the recipe I learned from a housewife in Hungary. The difference between this and most on here is the use of dark meat and a lot more paprika. Sorry for the mix of standard and English measures, but sour cream is sold in one pound tubs. The meat comes out to about 5 pounds of bone-in dark meat.

Recipe Ingredients for Authentic Chicken Paprika

1 tbsp olive oil
150 g onion
250 g Hungarian sweet peppers
250 g tomatoes, seeded and cored
1 tbsp salt
1 tsp pepper
1/4 cup paprika
1000 g chicken thighs, skin on
1000 g chicken legs, skin on
1 tbsp flour
1 lb sour cream

Recipe Directions for Authentic Chicken Paprika

  1. Saute onion in oil until translucent.

  2. Add peppers, tomatoes, salt, pepper and paprika. Let spices cook for 1 minute.

  3. Add chicken, brown and then cover.

  4. Simmer for about 1 hour until meat falls off bone. There should be a good amount of liquid rendered out.

  5. Remove meat from pan.

  6. Thicken sauce with flour.

  7. Mix in sour cream and add meat back in.

  8. Serve over spaetzle.
