The best home made chicken curry, requires a plethora of spices but well worth every mouthful! My husband loved it.

Recipe Ingredients for Authentic Chicken Curry/vindaloo

3 tbs unsalted butter
1 tbs canola oil
1 small onion, finely chopped
1 tsp ground cinnamon
5 g cardamom pods
5 g cloves
1 tsp mustard seeds
50 g ginger, finely chopped
2 cloves garlic
1 tsp turmeric
1 tbs ground coriander
1 tbs paprika
6 oz tomato paste
450 g skinless chicken breasts, cubed
2 tbs whipping cream
1 tsp ground cumin
10 g scotch bonnet pepper , finely chopped
2 cups water
1 salt

Recipe Directions for Authentic Chicken Curry/vindaloo

  1. Heat the butter in a large heavy pan, add the chopped onion and fry till onion is transclucent.

  2. Turn the heat to medium low, add the cinammon, cardamom, cloves and mustard seeds, stir for 5 minutes. Add the ginger and garlic and cook for another 5 minutes stirring occasionally to make sure nothing sticks to the bottom of the pan. Then add the turmeric, ground coriander and chilli powder and fry gently for a minute. Add the tomato purée and stir in enough hot water to make a sauce. Bring to the boil and simmer, stirring occasionally for 20 minutes. Season with salt.

  3. Heat a little oil in a large heavy frying pan and stir-fry the chicken pieces until they turn white.

  4. Add the chicken and whipping cream to the sauce and simmer gently until the meat is soft and succulent.

  5. Sprinkle with the coriander and serve with plain rice and yogurt.
