No mushrooms or catsup allowed--this is the authentic recipe.

Recipe Ingredients for Authentic Beef Stroganoff

1 lb sirloin steak
1 cup beef broth
1 tbsp unsalted butter
1 tbsp flour
1 tsp mustard
1 onion
3 tbsp low fat sour cream

Recipe Directions for Authentic Beef Stroganoff

  1. Melt the butter in a saucepan and add the flour to make a roux

  2. Add the beef broth and bring to a boil; turn down to medium

  3. As it thickens, add the mustard (preferably a very hot Russian style mustard) and stir in

  4. Bring to the boil again, and then add the sour cream

  5. In a skillet (spray lightly with oil) fry the beef with the sliced up onion, just until browned

  6. Add the beef to the sauce (I usually keep the onions, too, though this isn't part of the recipe) and turn the sauce down to low

  7. Let the sauce sit on warm heat for about 10-15 minutes and then serve over Russian Fries
