This recipe can be tricky to make. First, the diluted vinegar must always be tasted to make sure it is not to strong. It can depend on your taste and what vinegar you use. Also, how much of the dilute vinegar you use will also depend upon the potatoes. You want to add enough vinegar until the potatoes are moisted, but not wet (or you'll end up with mashed potatoes).

Recipe Ingredients for Austrian Potato Salad

5 pounds red potatoes
1/3 cup apple cider vinegar
2/3 cup water
1 small onion, minced
3 celery stalks, minced
60 g mayonaise
1 tablespoon mustard

Recipe Directions for Austrian Potato Salad

  1. Scrub the potatoes and boil until tender, about 15 to 20 minutes.

  2. Drain potatoes and add cold water. Let potatoes stand until they are cool enough to handle, but still quite warm. Peel and cut potatoes in halves or quarters, depending on the size of the potato.

  3. Add onion and celery.

  4. Mix vinegar and water and adjust to taste. Add salt if desired.

  5. Add diluted vinegar until the potatoes are moistened.

  6. In a separate bowl, mix mayonaise and mustard. Fold into potato mixture.

  7. Let stand at room temperature for flavors to meld or refrigerate overnight.
