Austrian Cabbage Salad Recipe

Slightly boiled cabbage with bacon

Recipe Ingredients for Austrian cabbage salad

3 cups cabbage, shredded
5 strips bacon, chopped
7 tbsp. vinegar
1 1/4 tsp salt
1 tsp caraway seeds
2 tbsp sugar

Recipe Directions for Austrian cabbage salad

  1. Cut Cabbage in fine strips.

  2. Blanch in boiling water.

  3. Let stand for 1 minute covered. (If not tender, bring to boil again, but make sure, it does not get too soft!)

  4. Drain the water.

  5. In the meantime, fry the Bacon and let cool, and keep the Bacon grease.

  6. Cut the Bacon to very small pieces, mince.

  7. Mix the Bacon bits with the Cabbage, add all other ingredients, including the some of the hot Bacon grease.

  8. Warm on slow heat, and serve warm.
