Recipe Ingredients for AUSTIN Zucchini Salad

1 1/2 lb zucchini
4 cloves garlic
2 tbsp olive oil
1 tbsp lemon juice
2 tbsp fresh mint
1 tsp black pepper

Recipe Directions for AUSTIN Zucchini Salad

  1. Halve the zucchini and then slice into thick matchsticks. Mince the garlic.

  2. Heat half the oil in a pan and saute zucchini and garlic until tender

  3. In a bowl combine the rest of the oil, and the lemon juice, mint and seasoning. Add the zucchini and mix well. Chill thoroughly.

  4. Serve with thick slabs of whole wheat bread
